The New York City Department of Environmental Protection (NYC DEP) has developed a guide titled Best Management Practices for Non-residential Direct and Indirect Discharges of Grease to the Public Sewer System.
NYC DEP has also developed a brochure titled What You Should Know About Preventing Grease Discharge into Sewers – Guidelines for New York City Businesses.
Additionally, NYC DEP has developed a brochure titled Grease Disposal Tips to Help the City’s Environment.
The California Fats, Oil, and Grease Workgroup has developed a comprehensive website containing technical guides, outreach materials for food service residences and facilities, and a collection of FOG control laws and regulations. The workgroup is formed within Tri-TAC, a technical advisory committee representing municipal wastewater management agencies in California.

The site provides comprehensive restaurant best management practices (BMPs), numerous fact sheets and slide presentations focusing on restaurant FOG management, and an example municipal sewer use ordinance to control FOG.
